Thai Curry Noodles with Beef

Ingredients
or1 tablespoon of oil, sesame, salad or cooking (14 g)
or40 grams or 1 dices shallot
or8 green onion, chopped; divided (80g)
or60 grams or 1/4 c of thai Kitchen Curry Paste
or4 frozen ginger cubes (or 4 tsp. minced ginger)
or1 1/2 Ibs. 96/4 ground beef (672g)
or1/2 tsp salt
or2 bell peppers, chopped (275g)
or 6 oz. mushrooms, sliced (168g)
or1 cup carrots, grated (112g)
or1/3 cup soy sauce (80g)
orTbsp. fish sauce (15g; optional)
or2 tsp. honey (7g)
or1/4-1/2 tsp. red chili flakes (according to heat preference)
or6.7 oz. uncooked ramen noodles or rice noodles (190g uncooked;
or1/2 cup reserved pasta water (120g)
or1/2 cup fresh basil, chopped (15g)
or5 frozen garlic cubes (or minced cloves)
Preparation

01. Heat a Dutchoven or heavy-bottomed skillet over medium-high heat with 1 Tbsp. of sesame oil. When the oil is hot, add the shallots and half of the chopped green onions (40g) and cook for 1 minute, stirring constantly, Add the curry paste, garlic, and ginger and cook/stir for 1 more minutes

Add the beef and salt to the hot pan, letting it sit for a minute to get some color on the bottom, before stirring and breaking apart until it's nearly cooked through. Add the peppers, mushrooms, carrots, soy sauce, fish sauce, honey, and red chili flakes. Stir and cook for 3-4 minutes until the veggies are tender. Turn off the heat.

Cook the ramen noodles according to package directions until al dente. Add the cooked noodles along with 1/2 cup of the pasta water to the curry and toss well. If necessary remaining 1/4 cup of the pasta water to reach desired consistency. Top with chopped basil and chopped green onions. I love to throw steam veggies my bowl and add even more fresh basil and garlic Enjoy!
