Hearty Creamy Protein Broccoli Soup

This soup is SO delicious, even your kids will love it! Forget trying to trick them into eating their greens, they'll beg for this soup. Packed with protein, not to mention loaded with vitamins and minerals, this mouth-watering soup will keep you and your family full for hours, while the prebiotic fiber gets to work repairing your gut flora from the inside out.

Did you know that one cup of cooked broccoli offers as much Vitamin C as an orange? Broccoli is also rich in vitamins B1, B2, B3, B6, iron, magnesium, potassium and zinc! It's a powerhouse of health, and we're bringing it to you in soup-form.

Ingredients
or2 bunch of broccoli, raw (1216 g) heads chopped
or1 medium onion yellow
or2 tablespoon of oil, olive for frying
or2 clove of garlic, raw (6 g) minced
or1/4 cup of water
or3 teaspoon/ 1 tablespoon of organic chicken broth or bouillon, dry (6 g)
or2 tsps of spices, onion powder (5 g)
or3 scoops of protein powder
or2 cups of unsweetened Coconut Milk (460 g)
orsalt, table to taste
orpepper to taste
orOnion dip mix to taste
Preparation
1.
Saute chopped broccoli, minced garlic, and onion in olive oil.
2.
Add 1/4 cup water and chicken bouillon.
3.
Cover and cook until broccoli is tender.
4.
Add onion powder and Epicure 3-onion dip mix.
5.
Mix well.
6.
(Optional) reserve 2 florets of broccoli for texture later.
7.
If using a Vitamix: pour mixture in, and add remaining ingredients (salt & pepper, Natural Nutralean, and coconut milk)
8.
Blend mixture on 'soup' setting until creamy.
9.
Add reserved florets of broccoli and pulse until chopped.
10.
If using a hand mixer: add remaining ingredients (salt & pepper, Natural Nutralean, and coconut milk). Blend until smooth and creamy.
