Healthy and delicious chicken mince meatball recipe, that works well with a salad, roasted veggies, or in a tomato relish with wholewheat pasta.
Ingredients
or450 grams of chicken breast, meat and skin, raw (or minced)
or100 grams of nuts, almond meal/powder (1/2 cup)
or1 tbsp of parsley, freeze-dried (0 g)
or1/2 cup of cheese, parmesan, dry grated, reduced fat (50 g)
or1/2 level teaspoon of salt (3 g)
or1/4 level teaspoon of pepper, black (1 g)
or1/4 level teaspoon of garlic powder (1 g)
or50 grams of eggs, chicken, whole, raw (1 large egg)
Preparation

To make the meatballs, preheat your oven to 425 degrees F and grease the bottom of a baking dish with olive oil, then set aside.2.
In a large mixing bowl, combine the ground chicken, almond meal, chopped Italian parsley, grated parmesan, sea salt, pepper, garlic powder, and egg and mix very well.3.
Using your hands, form the mixture into 2-inch meatballs.4.
Place the meatballs into the baking dish, separating them a little bit so they can evenly bake.5.
Put into the oven and bake for 15-20 minutes, until almost cooked through, and then turn the oven to broil for 3-5 minutes to create a crispy, golden-brown top.6.
To make the zucchini, heat the olive oil over medium-high heat in a large skillet.
