Delicious creamy biscoff cheesecake, a crowd pleaser.
We love cheesecakes as our birthday cake of choice. I decided to try to make my own cheesecake as the cost of bought cakes has increased.
A typical cheesecake costs about $49 for a full cheesecake, this version cost only $20 which was worth making :)
Ingredients
or250 grams Biscoff biscuits
or400 grams of cream cheese
or200 grams of biscoff spread (or even nutella)
Preparation
1.
Crush 200g of the Biscoff biscuits (leave 50g for the topping) in a food processor, until you have biscuit crumbs.2.
Melt the butter. Mix the melted butter into the crushed biscuits. 3.
Press the biscuit crumb mixture into a greased and lined cake tin (preferably with a removable bottom).4.
Place the biscuit base into a hot (190 degrees Celsius) oven for 10 minutes.
Remove from the oven allow to cool on the bench. Once cool, place into the fridge for at least 10 minutes (or the freezer if you are in a hurry).5.
Whip the cream and set it aside.
In the food processor, add the cream cheese and Biscoff spread and mix until smooth.
Fold the cream cheese/Biscoff mixture into the whipped cream.6.
Spread the creamy mixture over the biscuit base.7.
Place the remaining 50 g of Biscoff biscuits in a sealed bag. Use a rolling pin to crush into crumbs. Sprinkle over the cheesecake.8.
Chill the cheesecake for at least 1 hour in the fridge.
Serve with Greek yoghurt or whipped cream.
