Welcome! My name is Alexis Kiefer and I am a Registered Dietitian. I am originally from Virginia and got my undergraduate degree from Virginia Tech (go hokies) in Nutrition and Exercise. I then moved to Charleston, South Carolina to continue my education at the Medical University of South Carolina. After falling in love with the beach and warm weather, I decided to stay here and start my career as a clinical dietitian.
Nutrition and exercise are my passion and I want to help make them your passion too! I specialize in plant-based diets, sports nutrition, and weight loss (including bariatric surgery and GLP-1 medications). My goal is to help clients determine what needs to be done to live the life they want. I am able to determine calorie and macronutrient goals, provide recipes, create meal plans, discuss exercise habits, and so much more. Combine warm water, yeast, and sugar in a large bowl or stand mixer, let sit for 5 minutes
Add 3 cups bread flour and salt
Knead or use dough hook to mix for 8-10 minutes
Add oil to the bowl and place dough inside, coat dough with oil
Cover loosely with a towel and let rise for 1-2 hours or until it has doubled in size
After dough rises, punch it down
Divide dough into 8 pieces
Roll the dough into a ball and flatten
Using your thumb, press into the middle of the ball and stretch to form a 2 inch hole in the middle
Place dough onto sheet pan and cover with a damp cloth, let sit for 10 minutes
Bring water in a saucepan to a boil
Place bagel in water, cook for 45 seconds, flip to the other side and cook for 60 seconds. The longer you cook them, the chewier they will be
Remove bagel and place on towel to dry off
Preheat oven to 425 degrees
Brush each bagel with melted butter and any toppings you desire
bake for 20-25 minutes until golden brown
Put all ingredients into a food processor or blender
Blend until desired creaminess
