Chickpea Curry

A hearty dish, with a nice kick of spice

Ingredients
or200 grams of chickpeas (Drained Weight)
or100 grams Frozen Peas
or1 medium sized Red Onion (Rough Chopped)
or4 cloves of garlic, raw (Grated)
or50 grams of ginger, fresh (Grated)
or3 level teaspoons of curry powder (9 g)
or1 tsp coriander seed (Crushed)
or5 grams of cumin seeds (Cushed)
or100 g tinned Tomatoes (chopped)
or500 grams of coconut milk
or200 g potatoes, (diced & Par-boiled)
or1 Tbsp tomato puree
orPinch of Salt
orPinch of Black Pepper
or1 tbsp of oil, walnut oil
Preparation
1.
Heat the Walnut Oil in a larger frying pan
2.
Add the Red Onion and sweat until softened
3.
Add the Garlic & Ginger, and cook for 3-4 minutes
4.
Add the Curry Powder, Corriander & Cumin, and cook for a few minutes
5.
Add in the Frozen Peas & Chickpeas. mix all ingredients together well
6.
Add in the Cocnut Milk and mix well
7.
Mix in the Tinned Tomatoes & Tomato Puree
8.
Add the Ptoatoes, Salt & Pepper
9.
Simmer for 5-10 minutes
10.
Serve with your favourite Rice, Flatbread, or other side dish
