Make these easy no-bake date, almond and peanut butter energy balls with just four ingredients. A naturally sweet, fibre-rich homemade snack!
Ingredients
or200 grams of dates, raw, flesh and skin, weighed with stones
or100 grams of almonds, toasted
or60 grams of peanut butter, smooth
or25 grams of sesame seeds
or30 grams of water, distilled
Preparation
1.
Soak the dates in water for 10 minutes, so they become soft and easy to blend.2.
Add the almonds to a food processor and pulse until finely chopped. You can leave a few small pieces for extra crunch.3.
Add the pitted dates and blend with the almonds until the mixture begins to clump together.4.
Add the peanut butter and blend again until the ingredients form a sticky mixture. Scrape down the sides of the food processor if necessary.5.
Add the sesame seeds and pulse briefly to distribute them evenly throughout the mixture.
If the mixture is too dry to hold together, add water a teaspoon at a time. Avoid adding too much, as this can make the balls difficult to shape.6.
Take a small amount of the mixture and roll it between your palms to form a ball. Repeat until you have used all the mixture.
If it feels sticky, slightly dampen your hands. For an extra finishing touch, roll the balls in additional sesame seeds or finely chopped almonds.7.
Place the energy balls in an airtight container and refrigerate for 30–60 minutes to help them firm up.
